Passion turns into profitable success

Le Cordon Bleu was honored to welcome award-winning, inspirational Executive Chef and Consultant Alejandro Saravia – co-owner of Pastuso Peruvian Restaurant and Cevicheria Bar to speak at their Sydney graduation ceremony in February 2016 as well as speaking with current Advanced Diploma in Hospitality & Culinary Arts students.

Alejandro, alumnus from Le Cordon Bleu Peru (Lima) has worked at esteemed venues in Peru and Europe, including the Fat Duck (London) and Les Ambassadeurs (Paris), as well as prominent Sydney restaurants including Salon Blanc and Sails on Lavender Bay.

 

Speaking to the Le Cordon Bleu students, Alejandro spoke passionately about creating fine food and inspiring diners. He also addressed the importance of ensuring you have the necessary commercial sense for building a highly profitable business operation.

 

“today’s chef is not hidden in the kitchen, they are public figures interacting with media as well as smart business operators ensuring their passion translates into profitable success”

As a dedicated and enthusiastic advocate of Latin American cuisine and culture, Alejandro spoke openly in his presentation about how important it was to learn from the best in the business, stating:
 
“don’t open your business too early, don’t rush yourself, understand the value of your stage; learn and get experience from as many challenges open to you - be patient and wait for the right time, it will come!”
 
Having run two highly successful restaurants in Sydney and Melbourne he states that it took a lot of hard, dedicated work but the passion and drive is ongoing as Alejandro continues to introduce Peruvian cuisine to the Australian food scene through festivals, degustation menus and special events.
