“The most important things I learned at Le Cordon Bleu were the skills in patisserie and how to work efficiently as a team”

Graduating from the restaurant management degree in Adelaide provided Amber with the business accruement needed to underpin his aspiration to open a high end patisserie café one day.  No content with just understanding how the front-of house worked, Amber continued his studies travelling to Sydney to complete the patisserie diploma. 

Amber's close friendships established whilst studying in Adelaide brought Amber back to set-up Astonish Patisserie Café, with its collectic décor reminiscent of an old school Englishman’s library - bookshelves, world globes, use of wood and luxurious chairs gives it that old-world charm located in the heart of the city.

With the Patisserie café now having been operational since 2012 Amber’s looking to open a second patisserie shop closer to the city with a grand plan to within the next 5 years “if everything goes smoothly” possibly look at Sydney or Melbourne.

Amber spoke about his fascination with desserts and always wanted to be a chef – and whilst studying at Le Cordon Bleu he found that desserts was something he excelled in and enjoyed! 

Ambers said: “if you want to run your own business you need to understand both sides of the business”

When asked why Amber studied with Le Cordon Bleu he said: “Le Cordon Bleu is highly respected in Asian for its quality graduates and if you’re thinking about investing in your career this is where you’d study! It offers, through the training program, complementary industry experience & placement which provides underpinning skills training.  Also the industry recognises immediately a Le Cordon Bleu graduate for their advanced skills set; and the global connections through its alumni alliance association”.

Words of advice from Amber to graduating students: “be prepared as the market environment is very hard – don’t’ think the market needs you, you need it so be respectful to your customers and business clients.  Stay attuned to the industry, networking is essential and ensure you kept abreast of who’s who in the media”.
